Grecian Kalamata Pasta

This dish is another one of those perfect ones that has almost everything you need. Healthy plant based proteins (I love lentils), grains and an assortment of vegetables that are many colors of the rainbow. I used brown rice noodles which I have recommended before, not only are they delicious, but gluten-free as well. This dish is incredibly delicious. It was a hit with everyone that ate it too!

A few fun facts, I love olives, I always have. They give dishes a wonderful flavor and provide a great compliment to other veggies as well. They are also highly nutritious, just a few of their many benefits include; anti-inflammatory properties, anti-cancer properties, they are also high in antioxidants, fiber, copper, iron, other vitamins, minerals, amino acids and fatty acids. All of these health benefits will make your body very happy 🙂
